The restaurant's name is associated with the Balts, a group of tribes who are the ancestors of all Baltic peoples. They inhabited the territory of the Kaliningrad region and the Baltics, laying the foundation of the local culture. Recipes of Baltic tribes are reflected in the menu — for example, it features Curonian flatbreads from a wood-fired oven and Yotvingian pies baked on stones.

The main ingredients on the menu are local fish and game. The head chef personally goes to the fishermen to select sprat and flounder. Frozen fish is strictly avoided in the kitchen — proximity to the sea allows us to focus on freshness and quality. At least once a week, the team also visits local farmers to source meat and milk.

The restaurant's interior is also inspired by the nature of the Baltics. Minimalism, eco-friendliness, and functionality are placed at the forefront. Natural materials and organic textures form the basis: stone, log cuts of fallen trees, old breakwaters salvaged from destruction, seashells, dried flowers, and handmade ceramic vases.
